Cloud Eggs Recipe

After a few days of my husband bugging me to try a new “trendy” way of making eggs, I finally caved in and tried it. I was so pleasantly surprised. They’re really simple to make and pretty tasty. You can spruce them up by adding a side of breakfast potatoes, some toast, avocados, really anything you like. Or, keep it carb-free if you’re trying to shed a few pounds before summer.

Ingredients

2 eggs A pinch of salt

Pepper

Directions

Separate egg whites from egg yolks. Whip egg whites until stiff peaks form, add salt. On parchment paper, make 2 dollops of egg whites with a groove in the center. Bake at 475F for 3 mins. Add egg yolk to the center, then bake again for another 3 mins. Add salt and pepper to taste.

Ricotta Pancakes Recipe

Don’t be scared if you don’t like ricotta. This recipe is amazing and doesn’t taste like ricotta cheese at all.  My husband ordered a version of it at brunch one day and ever since I’ve been trying different recipes to duplicate it. I’ve combined and tweaked a few recipes and came up with the perfectly fluffy and moist pancakes. I make it almost every weekend. I serve it with whatever fruits I have on hand with either maple syrup or whipped cream.
